Beef Stew

An appetizing recipe which my mother every now and then prepared for us and we cannot wait to eat it. She is the best cook ever. I remember mama cooking this recipe, my father and I waited with mouth-watering enthusiasm. I made some variations and it tastes also good!

You will need:

1 1/2 kg Beef schank***
3-4 carrots cut into half inch thick
4 stalks celery cut into half inch thick (optional)
3 pcs. sliced or cubed potatoes 
2-3 cloves crushed garlic
1 medium size onion
1 small size ginger crushed
2 medium chopped tomatoes 
Oil
Flour
2 tbsp soy sauce
Sea salt and pepper to taste
Parsley and String onions
Water
1 small can tomato sauce or tomato chunks

*** I usually buy beef used for making soups. I also add the bones and bone marrow which definitely has more flavor and tastes simply good aside from the fact that it is cheaper than roastbeef or lean meat.

So to begin with, using a pressure cooker, sáute the garlic, ginger, onion in oil. Add the tomatoes. Add the beef, water, seasoned with soy sauce, salt and pepper. Cover and cooked for about 30 minutes.  After that, add the tomato sauce and the vegetables and cook it for another 20 minutes or until the beef is tender.

Serve with rice and enjoy!
