Puto Maya with Sikwate (Hot Chocolate)

I used to eat Puto Maya with a small cup of hot chocolate every Sunday morning at the Market in my hometown.

Here in Germany, I have to find some recipe and try it by myself. Last week my Auntie came to visit and brought some Puto Maya! What a surprise, it was like the good old days in Calamba.

Ingredients:

1 kg Glutinous Rice
100 ml water
4x 165 ml coconut milk
4 tbsp sugar or more if you want it to be sweeter
1 to 1-1/2 tsp salt
Vanilla Flakes (optional)
Cinnamon Powder (optional)
1 big grated ginger or 3 tbsp ginger juice

1. Wash rice with cold running water. Drain excess liquid.

2. Place the rice, water coconut milk and the rest of the ingredients in a nonstick pan. When it starts to boil, reduce the heat, Let it simmer for a while until the wet ingredients are fully absorbed. The rice is a bit sticky but still far from being fully cooked.

3. Transfer rice to the steamer just to form a lump and cover it, you can add some water while stirring it occasionally until it is fully cooked.

TIP. BEFORE COOKING, SOAK THE GLUTINOUS RICE IN WATER FOR 3-4 HOURS, SO IT WILL BE COOK FASTER.
