Ensaymadas (Filipino Sweet Bread)

One of my favorite sweet buns in the Philippines is the Ensaymada topped with butter and sugar and sometimes with grated cheese.

Normally they are twirled but since I was in a hurry, I just put them in a muffin form. It is not actually the form that counts but the taste!

I prefer to eat them with hot chocolate. Yummy!

Here's what you need:

80ml lukewarm milk
1 pack dry yeast
2 eggs
40 ml evaporated milk or unsweeted condensed milk
3 tbsp melted butter
50g sugar
1/2 tsp salt
210g bread flour, normal flour will do if you do not have any bread flour.
20g softened butter and some sugar for coating
shredded cheese for the topping (optional)

1. In a small bowl mix the yeast with the milk and set aside.

2. In a bigger bowl add the eggs, evaporated milk, melted butter. Mix well.

3. Add the yeast mixture, sugar and mix well.

4. Add the salt and then slowly add the flour to the mixture and mix well to form a dough. The mixture should be soft and sticky.

5. In the video I immediately put them in the muffin forms and covered in a plastic wrap because I was trying a different way of making ensaymada.

6. Let it rest for about 1-1/2 hours in a warm place.

7. Uncover and  bake them for 15-20 minutes at 150-170° degrees. Do not brown them too much so they remain fluffy and not too hard from the outside.

9. Let it cool and brushed them with butter and coat with sugar.  

10. Serve with hot chocolate or hot coffe.

Note: If you don't want to put them in muffin forms, simply cover the bowl with plastic wrap and omit step no. 5. Let it rest for 1 and half hours. Cut them in desired sizes, flattened each using a rolling pin or just with the hand. If it sticks to the hand sprinkle some flour. Brush the middle with melted butter. Roll and twirl each and let it rest for 20 minutes and bake them.
