Patatas Pandesal (Potato Bread Rolls)

This video is one of my favorite because my son was helping me while making the dough and his sweet comment when I let him taste it was awesome! It makes baking fun -:)

Potato Pan de Sal (Potato Bread Rolls) is an alternative to our traditional Pan de Sal in the Philippines.

Here's what you need:

3 Medium size Potatoes, peeled, cooked and mashed 
120ml lukewarm milk 
1 tsp sugar
1 pack dry yeast 
240ml warm milk
1 tbsp honey
1 egg
1 tsp salt
2 tbsp melted butter
4-5 cups flour 

1.  Peel the potatoes, cut into cubes, cook until tender, mashed and set aside.

2.  In a small bowl, add milk, sugar and dry yeast. Mix well and set aside.

3.  In a bigger bowl, add the milk, egg, honey and butter. Mix well

4.  Add the yeast mixture and mashed potatoes. Mix well again. 

5.  Slowly add the flour to the mixture. Add the salt. Knead until the dough is smooth and not sticky. Here you may add more flour if needed.

6.  Cover and let it rest for 1.5 hours.

7.  In a clean surface, sprinkle some flour and knead the dough again

8.  Cut and divide them equally into small rolls

9.  Coat them with breadcrumbs and put the rolls in a greased baking pan.

10. Cover and let it rest for another 30 minutes.

11. Bake at 170°C for about 20-30 minutes.
