Cassava Cake

Cassava Cake is one of my favorite dessert in the Philippines. Easy to prepare and tastes super!

Cake Ingredients:
454 g frozen cassava (available in Asia shops)
200 ml sweetened condensed milk
180 ml evaporated milk
320 ml coconut milk
2 eggs
2 egg whites
100 -150 g sugar


Topping:
2 egg yolks
160 ml coconut milk
105 ml sweetened condensed milk
 

1.  In a mixing bowl, combine all cake ingredients and mix very well.

2.  Pour the mixture in a greased pan.

3.  Bake it at 170° C until the top has hardened for about 30 - 40 minutes.

4.  Mix and pour the topping ingredients and spread it evenly on the cake.

5.  Bake it for another 20 minutes or until the top turns a little golden brown.

6.  Let it cool a bit and serve.
