Palitaw (Sweet Rice Cake)

Palitaw is a delicious declicacy in the Philippines. Here I use glutinous rice flour and a little rice flour (normal) so that it is not so sticky. When I make this I remember the good old days in my country :)

Ingredients:

225g Glutinous Rice Flour
75g Rice Flour
175 ml Water
3 tbsp Sesame seeds for coating
5 tbsp Dessicated coconut for coating
sugar for coating

1.  Roast the sesame seeds. Set aside.

2.  In a bow mix the dessicated coconut with water, this will softened the coconut. Set aside

3.  In a separate bowl, mix the glutinous rice flour, rice flour and 175 ml water. If the mixture is too dry add some water and
     if it is too wet add some flour. Mix until a thick, sticky mixture forms. 

4.  Heat enough water in a big pot. Let it boil and set the flame to medium. Form the flour mixture into small balls and add them
     one by one in the pot.

5.  Cook until the palitaw floats. This means it is already cook and ready to eat.

6.  Let it cool for a while and coat each with desiccated coconut, sesame seeds and sugar.
