Cassava Suman (Suman Balanghoy)

Yuhuu, I finally get the perfect ingredients of Suman made from Cassava or what we call Suman Balanghoy or Balinghoy.  It is my favorite dessert way back in the Philippines, I always ask my mom to buy it every Sunday at the markt.  Luckily a friend said it is very simple to make and shared her recipe, so here it is guys, I also want to share it to you.

Here's what you need:

1 pack (454g) frozen grated Cassava (thawed)
1 cup grated coconut (here i used disiccated coconut)
3/4 cup brown sugar
1/2 cup coconut milk
10-15 pcs banana leaves (12,5 centimeters wide)

1. Pass the banana leaves over high flame to wilt. This way they are soft and easy to roll. Wipe them afterwards with a clean cloth or kitchen paper.

2. In a bowl add all ingredients (except of course the banana leaves) and mix very well.

3. Take 1-2 tablespoon of the cassava mixture and put it on the banana leaves and fold and wrap it neatly. Fold the two ends.
    Rip some small portion of the banana leaves and tie a knot on both ends to secure them (see video).

4. When done, put them in a steamer and cook for about 40-60 minutes.
